Aavare began with a simple frustration: the food of Odisha is extraordinary, and almost nobody outside the state has tasted it properly. Not reheated, not diluted, not sold as an afterthought in a plastic tray — but made the way it is made at home, in Puri, by people who have made nothing else.

The Beginning
One sweet, done properly.
We chose to start with Khaja because it is the hardest to fake. Its quality is visible: the number of leaves, the colour of the ghee, the way it fractures. There is nowhere to hide.
Our first partners are two families in Puri who have made Khaja for four generations. We buy their time, not their volume. Nothing is fried until it is ordered; nothing waits in a warehouse.
From there, Aavare grows outward — into the pickles, the sweets, the grains and the rituals that make Odisha's table unlike any other in India.
